Wild Boar with Red wine and plums

I would like to share a recipe that is one of my favorite recipes for cooking wild boar meat. The formula is measured for 4- 5 portions.

List of ingredients

2 kilos of wild boar meat cut into pieces

20 small(baby) onions

1 cup of olive oil

15 dried prunes(pitted)

200ml sweet red wine

For the marinade

1 diced onion

2 diced carrots

5-6 pieces of garlic

1 orange cut into round pieces

1 cinnamon stick

3-4 pieces clove stick

5-6 pepper balls

4-5 spice balls

500ml red wine

Put the pieces of meat in a dish and cover them with all the marinade ingredients. Let them marinate for 24 hours, stirring the meat 4-5 times. The next day, take the meat out of the marinade and dry it well. Strain the marinade liquid and keep it separate from the ingredients. Discard the cinnamon stick. Put the plums in the sweet red wine for 1 hour.

Preheat the oven to 180 C degrees.

In a large pot, heat 4-5 tablespoons of olive oil and saute the onions over medium heat until they take on color. Then we take them out and keep them separately. Add a little more olive oil and saute the pieces of meat on all sides. We keep those separate as well. Then, add a little more olive oil and pour the solid ingredients of the marinade into the same pot, sauté them while stirring for 2-3 minutes, and extinguish them with the marinade liquid. Let them boil until the liquid is reduced to 1/3 and transfer it to a pot. Add the meat, salt, pepper, and olive oil.

Put the lid on the pan and place it in the oven at 150 C degrees for about 4 hours. At three hours, put the onions in the pot. Twenty minutes before the food is ready, add the plums.

You can accompany the meat with mashed potatoes, baby potatoes with rosemary, or baked potatoes. Enjoyed it with a glass of red wine too!
